2023 was a year full of many iterations of what I think a bakery can be. At its core, a bakery needs to offer delicious things. That’s pretty much it. I mean, I’ve seen coffee shops selling some very average products for $5 a pop. So, after a round of successful popups in Downtown Brooklyn (I’ll save that story for another post), and after picking up a few restaurant clients for specialty breads, I decided to try my hand at getting some delicious sourdough cookies out into the world.
