Alright, so you already know that I make a mean pan de coco (It’s actually the reason I even have this whole media career, but who’s asking….) Anyway, if you didn’t know, there is a difference between pan de coco and coco bread. While pan de coco literally means coco bread, it is widely consumed in Central America and it is usually a hearty, slightly sweet, but very coconut-y bread that accompanies soups, stews, or serves as your general “I want to shove bread in my mouth for no reason” bread. Pan de coco uses a healthy amount of coconut milk in the dough and traditionally is not topped with anything (I, of course, love topping mine with shredded coconut).
